Breaded Chicken Breast w/ Tomato Basil Topping
Breaded Chicken
Ingredients
Nonstick Olive Oil Cooking Spray
2 egg whites
½ cup all-natural seasoned breadcrumbs
1 pound boneless, skinless chicken breasts, thinly sliced
Instructions
Preheat oven to 375 degrees F. coat a nonstick baking sheet with olive oil spray.
Put the egg whites into a medium sized bowl, and spread the breadcrumbs onto a sheet of waxed paper. Coat the breasts by dipping each into the eggs, then the breadcrumbs.
Put the chicken onto the baking sheet, and spray the breasts with olive oil spray.
Bake for 20 minutes until slightly browned
Top with tomato basil topping

Tomato Basil Topping
Ingredients
5 Roma tomatoes, chopped
1-teaspoon olive oil
1-teaspoon freshly chopped garlic
2 teaspoons balsamic vinegar
1 tablespoon freshly chopped basil
½ teaspoon freshly ground four-blend pepper
Instructions
Place tomatoes in a small bowl and add the oil, garlic, vinegar, basil and pepper.
Mix ingredients together and refrigerate
