To add to this alarming statistic, 40 million are obese and 3 million are morbidly obese. Eight out of ten people over the age of 25 are overweight. Since 1990, we have seen a 76% increase in Type II diabetes in adults 30-40 years old. Hello people!! These stats are down right scary. Experts all agree that proper diet and exercise are the key to fighting and preventing this wide spread epidemic that is effecting millions of Americans. Keep in mind that if you are looking to stay healthy it’s a good idea to avoid boxed, frozen or deep fried chicken. With such a large number of overweight people, thankfully we have a demand for healthy recipes. Here are a few healthy party snacks that will make the whole family happy.
Ingredients:
1 pound of boneless skinless chicken breast
1 ½ tablespoon of Dijon mustard
1 ½ tablespoon of frozen orange juice concentrate
1 ½ tablespoon of honey
1 teaspoon of sesame oil
½ teaspoon of ground pepper
¼ teaspoon of salt
Cut chicken crosswise into ¾-inch-wide strips. Whisk mustard, orange juice concentrate, honey, sesame oil and pepper in a medium bowl until smooth. Add the chicken and toss and combine. Cover and marinate in the refrigerator for 15 minutes. Prepare grill or preheat the broiler. Oil the grill rack or coat a pan with cooking spray. Remove the chicken strips from the marinade, discarding remaining marinade. Grill or broil the chicken until no longer pink in the center, 2 to 3 minutes per side. Season with salt and serve.
