Moroccan Rice Salad

Ingredients:

2 cups water
½ tsp. Salt
1 cup long-grain white or brown rice
1 small red pepper, diced
1.2 lb. Lean smoked ham, diced
8-pitted dates, snipped
¼ tsp. Cinnamon
Fresh ground black pepper to taste

Dressing:¼ cup fresh orange juice
2 tbsp. Lemon juice
¼ cup olive oil
1/8 tsp. Cinnamon
¼ tsp. Salt

Instructions:

In a medium saucepan, bring water and salt to boil. Add rice. Cover and reduce heat; simmer for 16-18 minutes.In a separate dish, whisk together dressing ingredients until smooth.When rice is cooked, scoop onto a large plate to cool. When it reaches room temperature, stir in pepper, ham, oranges and dates.Drizzle with dressing and stir gently; top with cinnamon and freshly ground pepper.
